巴生Ocean后面1967年迄今的家记大炒,或许1967年迄今是多少年,你没具体想法。如果我说这档口在滨华中学的附近,贵阳茨粉根餐馆的后面已经47年。<br />

能在巴生市区里头,接近半个世纪,肯定是有一群忠实的食客,这一家的炒福建面与炒干米粉是许多巴生人寻找古早味必点的美食。<br />

就这样,一代代家记大炒的名字传了下去。<br />

但是,吉隆坡有为食街,麻坡也有贪食街;巴生的“为食街”在哪里?<br />

似乎也没有人清晰定义。要选看来有三大为食区,一是巴生市中心,二是班达马兰大街,第三条看来非永安镇与百家利这一带。<br />

但是要比名气,或许盛发肉骨茶是上过无数次国际电视台节目的,可能大家没留意永安镇大树下的美食中心,其实一样如此出名,台湾爱拍客还跑到这一带非常多美食选项的永安镇大街的美食摊位。<br />

讲起历史其实这些档子原本是一群餐车,由于他们不断的涌进来,顾客不断的多,多到阻碍交通,结果干脆就搭起鱼盖做起小贩摊位,短暂的几年就买出名气来!<br />

爱的最多的就是巴生人喜欢煮黑酱油鸡,台湾有三杯鸡,人家的酱油是酱青,也不到三分一比重,我们的黑酱油确实用量好大,仔细发现许多妈妈味道特别浓的可以用上三大汤匙以上!<br />
<br />
原来,巴生人爱老抽,也就是黑酱油;简直就是厨房里头的活宝。<br />
<br />
用在猪肉上,可以是煮的也就是弄熟,福建话叫“kien”,也就是浓郁的把猪肉,外加糖,猪皮还是很Q的那种。<br />
<br />
当然,巴生人煮猪肉是看猪的部位的,也深知道什么部位用怎样煮,很好吃!<br />
<br />
就像牛扒对于西方料理一样。<br />
<br />
猪脚一般也用于烹煮,但是浓郁的黑酱油却伴随着更大比重的黑酱油,可能多了醋,外加糖。<br />
<br />
当然有加醋的,酱油量不那么多;却黑醋比重特重。姜与蒜米的比重把猪脚煮烂煮糊,化口可是人间鲜味!<br />
<br />
如果没加那么多醋,外加糖。福建人喜欢用闷的,很夸张,把它煮成入口既化,有人说是“封肉”,有人喜欢叫“烘肉”。<br />
<br />
问题是,噜肉用噜汁也用黑酱油;墩肉也用黑酱油;炒烧肉也用黑酱油,无数变化,一种黑酱油,水份,烹饪方法,糖与猪肉,许多变法。<br />
<br />
这原本是在30年前,我只是小童,绰号“肉王”,无肉不欢遇上我外公一个资深厨师的一段私人对话。他老人家不在了!但是吃东西的鸡饭档口还在,当时是新开,我向老人家说好吃,结果他陪我在那吃一餐。我们巴生吃鸡饭一定把黑酱油淋在饭上。<br />

因此,有这个故事。还有段想了想,不懂真假;因为外公做厨房,我当时问的天南地北,什么肉要怎样弄,他一一细说,我便问他,那么普遍,那为什么黑酱有没有用在炸的肉类?他说,有啊!还上了酒楼菜,厨房用麻油酱油五香粉胡椒等腌制,之后炸,然后把黑酱油加甜酱煮稠,炸过的肉吸收后上桌撒上芝麻,黑白分明的。<br />

陳湄蘭說,其媽媽以前在沙亞南16區經營飲食生意,後來舉家遷至檳城。因此,她早前與兄妹在檳城雖然是經營雲吞面生意,但同時她也會烹煮亞參叻沙的方法,所以這次重新出發,就以亞參叻沙為主角。</div>

陳湄蘭說,烹煮亞參叻沙也是她的拿手功夫。說到亞參叻沙,她對麵條的要求不次於湯汁,為讓食客嘗試到檳城道地的亞參叻沙,她依照檳城人的做法,選擇以米製成的麵條,又稱“甘榜面”。</div>

她解釋,檳城人吃亞參叻沙,不喜歡以瀨粉作配搭,而是喜歡以自製的甘榜面作為配搭。自製的甘榜面更易入味,口感更佳;同時,自製的甘榜面並沒添加防腐劑,必須每日新鮮製做及食用,不能隔夜。</div>

至於亞參叻沙的湯汁,她採用大目魚熬煮,代替甘望魚。她說,雖然大目魚價錢較貴,但品質卻比甘望魚來得更好。</div>

陳湄蘭說,她每日熬煮兩鍋湯來應付一日的生意,每一鍋湯需要10公斤的大目魚才能熬出好味道。此外,少不了的材料如辣椒、亞參皮、亞參膏、薑花等加入湯內一起熬煮,才能熬煮出濃郁的亞參叻沙湯汁。</div>
